I’ve never had great luck with pancakes. They were either not fluffy enough, more done on one side, or just devoid of flavor. This time, however, I have ended that bad streak of luck with this recipe. It hails from the visually amazing and always appetizing blog, Daisy’s World. These flavor pancakes were a great weekend brunch item full of fruity pizzazz and a memorable note to wrap up summer.
I did have poor luck on the first round of making the syrup, but it was purely user error. I had the bright idea to leave that to simmer while I get my laundry together, vacuum around the house, ladada. So, one burned batch down, I dumped another load in the saucepan and it transitioned into a bubbling, warm berry ooze moments later. Ten minutes in fact, so use your best judgement and be attentive with it.
I sprinkled some powdered sugar on top that was the grand finale for this already handsome plate of pancakes. These flavors worked really well together and was a refreshing change from the usual plain buttermilk. You will be wiping up the last globs of blackberry syrup up that will leave all guests with a smile!
