Brussels sprouts still manage to be one of the most polarizing vegetables amongst kids and adults. I agree that they were not always my favorite. Now whether that was because I genuinely didn’t like them or was influenced by the smattering of ‘ewwwwws’ at the lunch and dinner tables is still to be determined.
However, these brussels sprouts do make the grade! Not only does the sliced apple and bacon give more umph! to this typically blase veg, it adds a fantastic crunch to the mix. It will spread a wonderful aroma in your kitchen, leaving your guests begging for more brussels sprouts….now how often do you hear that?!
Brussels Sprouts with Apple & Bacon
4 pints Brussels sprouts, ends trimmed and halved
1 apple, cored and cut into 1/4-inch pieces
2 teaspoons red wine vinegar
Preheat oven to 450F.
Cut ends off of brussels sprouts and cut in half. Spread sprouts evenly across a baking dish, drizzling a tablespoon of olive oil and sprinkling salt and pepper on top.
Put in oven for 20 min. After becoming slightly browned, lay bacon onto the same sheet until cooked, remembering to toss everything together.
Lastly, add cubed apples and toss well. Remove pan from oven once apples are slightly softened and sprouts have a slightly charred look. Stir in red wine vinegar and immediately serve.
